How to remove the heat from your hands.

Now that the peppers are roasted, cooled and pealed. Place in quart size bags for freezing. Pick as may of the seeds as you can away but do not wash the peppers to remove the seeds. You wash flavor away. Tip do not put you hands near your eyes or mouth or skin. You can use gloves to prevent the heat from absorbing into your hands. Or you can put Mayonnaise on your hand and let it sit for a few minutes to absorb the heat. Use Mayonnaise not Miracle whip. White Vinigar works too, but not as well.

One big mean pot of chili


BIG pot of Chili. This was cooked in a 17" Maca Dutch oven. This is about 30 quts of chili. Those ovens off to the side are 16" lodge ovens.
